Stuffed Pork Tenderloin

I’m back with another food post. I feel like it’s been a little while since I’ve done one of these, so today I’m sharing some pictures of this Stuffed Pork Tenderloin. I’ve made this a few times so far and it’s always delicious. I’m not a big pork eater. Well, let me clarify, I like pork but I am definitely not a fan of porkchops so I think that’s why it’s always in my head that I’m not a big pork fan. Anyway, this pork tenderloin is so good and definitely not too hard to make.

I start off with the filling which consists of spinach, sauteed mushrooms, bacon, and stuffing. The stuffing is a cheat because I just get the Stove Top stuffing that cooks on the stove.

I mix these cooked items in a bowl before pouring it onto the meat.

I have the pork on plastic wrap because it makes it easier to roll up.

Once you have it rolled and all the stuffing inside, secure the ends of the meat with toothpicks. Be generous with the toothpicks because you want it to stay closed while it bakes. Then pop it in the oven! I leave it in the oven for about an hour, but obviously you would leave it in until you feel the pork is cooked. All you need to do is remove the toothpicks and carve when it comes out. See, I told you – easy!

You can slice it as thin or as thick as you want, but I would make it thick enough that the stuffing doesn’t all just fall out. It’s so tasty and the pork isn’t dry at all because of the mushrooms and spinach inside which provide plenty of moisture. The bacon adds some saltiness and since the stuffing is pre-seasoned, it adds a really nice flavor to the meat.

You can stuff your pork tenderloin with anything you want, but this combination is quite tasty if I do say so myself!
