Japanese & Hawaiian Sweet Potatoes

Did you know there are more types of sweet potatoes than the regular orange ones that are so popular? Two other kinds of sweet potatoes that I and my family love and eat often are Japanese Sweet Potatoes and Hawaiian Sweet Potatoes, both of which have great health benefits! I’ve done a little online research to round up some food facts and I’m sharing with you all a super easy way to to prepare these potatoes.

Japanese sweet potatoes have a purple skin and are yellow inside. These potatoes are sweet, obviously, but I find them to have a less sugary sweet taste compared to the orange sweet potato. They are low in carbs and high in dietary fiber and vitamin c.

Hawaiian sweet potatoes have a light beige colored skin and are purple inside. So fun! These are again sweet, of course, but less so and a little more starchy. The biggest nutritional benefit to these potatoes are that they are high in antioxidants. In fact, they contain 150% more antioxidants than blueberries!

Onto my super easy way to cook them! My favorite way to eat these are by simply roasting them in the oven. First, peel the potatoes and cut into chunks. Drizzle oil over them, sprinkle salt and pepper, and then put the tray in the oven (at 375 degrees F). Super simple, right? Cook until you can easily pierce the potatoes. Around 45 minutes if you cut your potatoes roughly around the same size I did.

I love the sweetness of the Japanese sweet potatoes and the gorgeous purple color of the Hawaiian ones. But honestly, they’re both incredibly yummy and healthy too!
