Rustic Chicken
Before I get into summer food posts, which will consist of quicker, lightweight, and/or refreshing foods, I have one last hearty food post for you (at least for a little while).
This Rustic Chicken is not new to me and it’s inspired from something I saw on the Food Network years ago but I can’t remember now who’s recipe it is!
First, I brown the chicken thighs and boil some potatoes. Then, I put the chicken, potatoes that I either half or quarter depending on the size, grape tomatoes, oil, oregano, red wine vinegar, salt and pepper in a roasting pan.
Cook in the oven for about 40 mins-1 hour at 375 and you’ve got a nice filling meal!
