Potato Pie

I’m not the kind of person who goes on Pinterest daily, but when I do go on – probably 1-2 times a month – I can spend an hour on it just scrolling and scrolling for fashion inspiration, DIY ideas, nail ideas, but mostly food. I won’t stop looking on Pinterest until I feel like I’ve found an adequate number of ideas of things to make or create. One recipe that I found during one of my Pinterest binges was this Irish Potato Pie. The photos made it look so good so I had to make it! Good news, it was quite tasty but it was a lot of work slicing all those potatoes so I’m not sure how often I’ll be making this!

I mostly followed the recipe (linked above) but made a few changes which I will note as we go along. First, I peeled and cut the potatoes. You don’t want your slices to be too thick, so this took me some time.

I soaked the potatoes slices in some water to get some of the starch out.

The recipe called for 7 slices of bacon, which I find oddly precise. I used 9 because that’s how many slices of bacon I had left in my pack and I wasn’t about to just leave 2 behind!

I cut the bacon up and started cooking it. After cooking the bacon for a bit, I added in onion and tarragon, which I used instead of dill. Instead of using butter, I used olive oil.

While the onions and bacon were cooking, I got the crust ready. In a tart pan, I laid down puff pastry. My tart pan is a little bigger than the one in the recipe so I adjusted accordingly.

I then added in the potato and gently mixed everything around. Then, pour the whole mixture in to your tart pan on top of the puff pastry dough.

Next, I poured the heavy cream all over and let it seep into the little nooks and crannies of the potato pie.

Bake the potato pie at 350 for 35-45 minutes – until the crust is golden and the potatoes are fork tender.

The potato pie tastes delicious! When I make this again, I would definitely try to get the potatoes thinner so that they lay on top of each other better. Nonetheless, this is a great meal for winter since it’s filled with hearty potatoes. A Pinterest success!
