Spicy Kale & Portobello Tacos
Do you ever use the website/app Yummly? I first discovered it about 2 years ago. I mostly use Pinterest, but occasionally I’ll check Yummy out. What I love about that app is that you can search for recipes by ingredients which I find really helpful when I’ve got leftover ingredients in the fridge that I need to use up. So 2 years ago I had leftover adobo sauce and baby bella (baby portobello) mushrooms so I searched Yummly for a recipe. I found a taco recipeΒ using portobellos, adobo, and kale. Perfect since I also had kale! I followed the recipe above except I just eyeballed the amount of ingredients since…

Honey Mustard Brussels Sprouts Salad
How was everyone’s 4th? Since many of you may have been grilling and/or eating lots of food yesterday I thought I’d share a salad today. For the recipe you’ll need: brussels sprouts dried cranberries pecans red wine vinegar dijon mustard salt pepper garlic powder onion powder honey olive oil Since I got shaved…

Japanese & Hawaiian Sweet Potatoes
Did you know there are more types of sweet potatoes than the regular orange ones that are so popular? Two other kinds of sweet potatoes that I and my family love and eat often areΒ Japanese Sweet Potatoes andΒ Hawaiian Sweet Potatoes, both of which have great health benefits! I’ve done a little online research to round up some food facts and I’m sharing with you all a super easy way to to prepare these potatoes. Japanese sweet potatoes have a purple skin and are yellow inside. These potatoes are sweet, obviously, but I find them to have a less sugary sweet taste compared to the orange sweet potato. They are low…

Healthy Tailgating Food
Now that we’ve passed Labor Day it’s really starting to feel like the fall season despite the fact that the weather forecast says it’ll be over 90 degrees again today. When I think of fall one of the things that comes to mind is football and then with that tailgating comes to mind. I’m not sure if tailgating is a thing in other countries, but in the US tailgating is huge. Everyone heads to games way early to hang out, eat, drink, and play games in the parking lot. I haven’t tailgated in a while, but back in college I did often. My friends and I always did the standard…
