    Easy dinner idea coming at you today! I found this tortellini recipe on Pinterest a while ago and wanted to share it today.  It’s tortellini with garlic, onion, tomatoes, and spinach. So easy! I followed the recipe (linked above) and just made a few minor changes. I made 3 cheese tortellini from the grocery store, I used 3 roma tomatoes since that’s all I had, I used chicken broth instead of vegetable stock, and I used baby spinach instead of regular spinach.     Years ago I tried kimchi fried rice for the first time at Mogo, a Korean fusion taco place, and it was amazing. Since the place isn’t very close to me, I wanted to try to make it myself.
