
Tortellini with Spinach & Tomato
Easy dinner idea coming at you today! I found this tortellini recipe on Pinterest a while ago and wanted to share it today.Β It’s tortellini with garlic, onion, tomatoes, and spinach. So easy!
I followed the recipe (linked above) and just made a few minor changes. I made 3 cheese tortellini from the grocery store, I used 3 roma tomatoes since that’s all I had, I used chicken broth instead of vegetable stock, and I used baby spinach instead of regular spinach. Pretty minor changes and everything else was the same!
For this recipe you’ll need:
- tortellini
- olive oil
- onion
- roma tomatoes (the recipe calls for 4 and I used 3 here)
- spinach (I used baby spinach)
- garlic
- salt & pepper
- vegetable stock (I used chicken broth)
- crushed red pepper
- grated parmesan for serving
First, cook the diced up onion in oil. When it becomes translucent add in the tomato, salt, pepper, and crushed red pepper. After a few minutes, add in the garlic, chicken broth, and spinach, just until the spinach wilts. While this is all cooking, I cook the tortellini according to package instructions.
Add in the tortellini to the tomato and spinach mixture until all mixed and heated through. When serving, drizzle with olive oil and parmesan.
That’s it! So easy and a perfect quick weeknight meal.
