• Orzo Vegetable Soup

    Orzo Vegetable Soup

I know with the warm weather, soup is probably the last thing on your mind. But, I literally can have soup any time of the year. This one-pot orzo vegetable soup is one I’ve been making for over a year and it’s so good! I found the recipe on Pinterest and I pretty much use the exact recipe. The only change I make is that I add in extra orzo, because who doesn’t love orzo? So my soup has less liquid and more orzo. I also adjust the recipe based on how much I want to make. For the recipe you’ll need: olive oil yellow onion carrots celery garlic vegetable…

  • Chicken Noodle Soup

    Chicken Noodle Soup

Another soup recipe today. Last time, I posted about the copycat lemon chicken orzo soup despite it being summer and I’m at it again. Despite the hot temperatures, it does rain and storm a good bit in the summer and sometimes you just want something comforting no matter what the temperature outside so I’m sharing this homemade chicken noodle soup recipe I found on Pinterest that I’ve made before. I followed the recipe except I didn’t use any lemon juice so click the link above for the exact recipe details. For this soup, I chopped up some celery, carrots, and onion. Then, I started to cook them in my dutch oven…

    Lemon Chicken Orzo Soup

Okay, I know it’s not exactly soup weather here with it being in the 90s and forecasted to reach 100 this weekend, but if you’re in the mood for comfort food then this soup is for you! Years ago, my favorite soup at Panera was the Lemon Chicken Orzo Soup and I would order it every time I went. And then, of course, they took it off the menu. Didn’t they know it was my favorite item on the menu?! Anyway, I found a copycat recipe that tastes really good so I thought I would share it on here. I basically followed the recipe linked above, but the only changes…

  • Manhattan Clam Chowder

    Manhattan Clam Chowder

Are you a soup person? One of my favorite soups is manhattan clam chowder. I don’t drink it that often, but when I do I usually get the Campbell’s version. However, a while ago I made it myself and it was pretty easy! I believe the recipe I used was from the Food Network, with a few minor changes. The recipe calls for 5 cups of clam juice or five 8 ounce bottles and 7 cloves of garlic. I cut down on the garlic to 5 cloves and I substituted 2 of the clam juice bottles for chicken broth. Other than that I followed the recipe so click above if you’re…

    Chicken Tortilla Soup

Now that it’s getting cooler, it’s time to take out the slow cooker. For my first slow cooker meal of the season, I made chicken tortilla soup. This was my first time making it, but it’s been on my “to-make” list for a while because I love ordering it when I’m out. I love slow cooker recipes, because they are usually fairly straight forward and once you pop all the ingredients in you can leave it for hours (for the most part) while you do other things. The recipe I used was from All Recipes. For the most part, I stuck with the original recipe, but did make a few…
