
Lemon Chicken Orzo Soup
Okay, I know it’s not exactly soup weather here with it being in the 90s and forecasted to reach 100 this weekend, but if you’re in the mood for comfort food then this soup is for you!
Years ago, my favorite soup at Panera was the Lemon Chicken Orzo Soup and I would order it every time I went. And then, of course, they took it off the menu. Didn’t they know it was my favorite item on the menu?!
Anyway, I found a copycat recipe that tastes really good so I thought I would share it on here.
I basically followed the recipe linked above, but the only changes I made were that I used 1/2 cup of orzo instead of 1/4 cup because I love orzo, I diced up a roasted chicken breast, and I used homemade chicken broth instead of store-bought.
Chop up your vegetables and chicken, zest your lemon, melt butter in your pot and let your vegetables sweat. Add in the chicken broth, lemon juice, and zest. Once that starts to boil, I added in the orzo. When the orzo is cooked, add in the spinach. Spinach wilts really fast so after a minute you should be able to turn off the stove. Season to taste and you’re done!
I had my soup with a chicken sandwich. Soup and sandwich – yum!
