• Pasta Melanzane

    Pasta with Vegetables

Pasta Melanzane is essentially pasta with eggplant. And while I love pasta and eggplant, my mom and I wanted to add some other vegetables to the dish so that’s why I’ve simply called this “Pasta with Vegetables”. Not very creative, I know, but oh well. The recipe is really easy. I cut up eggplant, zucchini, grape tomatoes, and mushrooms. I put the eggplant in the pan first to start cooking and then added in the zucchini and mushrooms. Once those started to soften a bit, I added in the tomatoes. I cook it down and let the tomatoes start to burst. Meanwhile, I cooked the pasta (al dente because you’re…

  • Chicken Marsala Ragout + Rotini

    Chicken Marsala Ragout + Rotini

Are you a Food Network fan? I don’t watch it religiously, but I do enjoy seeing what’s on when I’ve got extra time. While it’s not my favorite show on the channel, I’ll sometimes watch Trisha Yearwood’s show. Today’s recipe is from her show. I made chicken marsala ragout with rotini. I followed her recipe except I used chicken thighs with the skin instead of skinless like the recipe calls for. So click (here) for the exact recipe! First, I did some food prep and cut up the mushrooms, onions, and garlic. Then, I browned the chicken thighs on some oil after seasoning the thighs with salt and pepper. Set the…

  • Linguine with clam sauce

    Linguine with Clam Sauce

Linguine with clam sauce is a staple in my family. Well, maybe not a staple – we don’t eat it that often, but often enough where it was always something in my family’s rotation of dinner ideas from time to time. One of the reasons, besides the fact that we like seafood, is because my mom doesn’t like cheese and so when out at Italian restaurants she would often and still does order this and then inevitably we started making it at home too. I don’t have exact measurements for you guys – you know I’m bad at that – but there are so many recipes you can find online so this…

  • Wagon Wheel Pasta + Peas & Bacon

    Wagon Wheel Pasta

My last food post featured Captain Jim’s Smoked Sockeye Salmon that I bought in Alaska and today’s food post is also inspired by my Alaskan vacation back in 2016. When I got back from that vacation I recapped everything I ate on vacation and I mentioned the wagon wheel pasta I ate on the cruise ship. It was so good that when I got back I looked up recipes that reminded me of it. I found this recipe by Giada and I have tweaked it and been enjoying this recipe for the past almost 2 years. I followed Giada’s recipe except I only used frozen peas and sugar snap peas. I…

  • Penne with Pesto

    Penne with Pesto

I think pesto sauce is incredibly underrated. I mean, I know people eat it and it’s served in restaurants on pastas and flat breads etc., but you don’t hear people talking about it much at all. I love pesto and it’s so easy to make on your own so I thought I’d share a quick post on it. For this recipe, I don’t have exact amounts for the ingredients – it’s a lot of “to taste” and the consistency that you like. You will need, fresh basil, parmigiano reggiano cheese, garlic, olive oil, pine nuts, salt, and pepper. I start off with a cup of basil leaves and grate some…

    Creamy Shrimp & Tomato Pasta

Today I’m sharing some food photos of a super easy recipe – a pasta dish with a light cream sauce, shrimp, and tomatoes. I’m not calling this a real recipe post because I don’t have a link for you to the exact recipe I used and I have no measurements. I can’t find the original recipe I found and since I first made it I’ve sort of just put it together/eyeballed it each time. But I do have photos and can walk you through the steps so you’ll have to either try to find the recipe yourself or work everything out/freestyle it yourself. First, I prepped my ingredients. I halved grape…

    Slow Cooker Cheesy Beef Pasta

It’s winter, which means it’s definitely slow cooker season. I’m sharing an easy, hearty, and delicious slow cooker meal today – a cheesy beef pasta. Usually when I find a recipe I change it a little (or a lot) to suit my tastes or needs but I actually didn’t change anything from the original recipe this time which I found here via Pinterest so you can look up all the measurements and things there! But I’ll be sharing some of the basic points of this recipe and the pictures of course! There are a lot of ingredients for this simple dish but trust me, it’s easy. First, I browned the beef with…

    Seafood Pasta

I don’t know about you, but I tend to eat a lot more seafood in the summer months. The food post I bring to you today is an easy (what else is new) pasta dish with shrimp, scallops, and clams. First, I pan-seared the shrimp and scallops. For the sauce, I used garlic and onions (that I first browned), white wine, anchovy paste, and the clam juice from the canned clams. Next, pour the sauce into the pasta pot and toss. Lastly, add in the seafood. Finally, plate your seafood pasta and add some parsley for garnish!

    Sausage & Vegetable Baked Pasta

In the winter, there’s nothing better than a hot meal straight out of the oven. I thought I’d share an easy baked pasta meal that has been a firm favorite for years. First, you take hot italian sausage out of the casing and tear it apart. Then, brown it in a skillet. During this your pasta should be cooking. Only cook it about halfway through since you will be baking it in the oven and don’t want it to be overcooked. Next, cut up zucchini and eggplant in cubes and sautee. When the pasta is (half) cooked, drain the pasta, pour in your marinara sauce (mine is homemade, but you…

    Chili Pasta Bake

Thanksgiving is just a few days away now! Before we start to see tons of Thanksgiving food posts, I have another “regular” food post to share. Recently, I made a Chili Pasta Bake that I found on Pinterest. It brought me to the recipe – here. The recipe was easy to follow and I really stuck to it for this meal. The only thing I didn’t do was put sour cream and green onions on top for serving because I’m not a huge sour cream fan. This recipe uses shells and actually now that I think about it I did use more pasta than the recipe calls for. The recipe…
