Pasta Melanzane is essentially pasta with eggplant. And while I love pasta and eggplant, my mom and I wanted to add some other vegetables to the dish so that’s why I’ve simply called this “Pasta with Vegetables”. Not very creative, I know, but oh well.
The recipe is really easy. I cut up eggplant, zucchini, grape tomatoes, and mushrooms.
I put the eggplant in the pan first to start cooking and then added in the zucchini and mushrooms. Once those started to soften a bit, I added in the tomatoes. I cook it down and let the tomatoes start to burst.
Meanwhile, I cooked the pasta (al dente because you’re going to mix it in the pan with the vegetables and I also like my pasta al dente in general). When the vegetables were all cooked down, I added in the pasta. It was a little dry, so I put in just a bit of chicken broth. Salt and pepper to taste.
And voila! An easy pasta and vegetable dish!
