
Irish Cheese Toasties
Happy St. Patrick’s Day to all who are celebrating! I went out with some friends last night after we watched Captain Marvel (enjoyed the movie and loved the character, btw) and had dinner. It wasn’t as crowded out as I had anticipated for the holiday weekend which was good for me. When we were deciding whether to go out to the bar or not, my friend said ” Jamie hates crowds and bad parking” and I said “Both are true”. Seriously, if a place has no parking or it’s difficult to find parking, it’s going to be hard for me to say yes.
When browsing online recently looking for a food to try out and post for St. Patrick’s Day, I came across Irish cheese toasties. I’ve previously shared my mom’s version of Irish soda breadΒ that we’ve been making for years so I wanted to share something new this year. The cheese toasties looked really easy to make and they were!
With the recipe I found all you need is baguette, dijon mustard, Kerrygold Dubliner Cheese, cracked black pepper, and thyme. The recipe calls for fresh thyme, but I had dried because it’s what I had.
I sliced my baguette and spread some dijon on each slice. Then, I grated the Kerrygold Dubliner cheese on top of each slice of baguette. Next, put the toast in the oven and bake or broil until the cheese melts. When you take the toast out, sprinkle the cracked black pepper over top and sprinkle some thyme on top.
The Irish Cheesy Toasties were really good! I had it for lunch last week with arugula salad and hard-boiled egg. There were perfect with my salad, but this could make a great snack, appetizer, etc.
