• Quinoa Spinach Salad

    Quinoa Spinach Salad

I’m always looking for recipe ideas for appetizers and side dishes so when I came across this Quinoa Spinach Salad and saw how easy it was, I had to try it! I pretty much used this exact recipe (here) from Trisha Yearwood except I didn’t use any cilantro, because I hate cilantro. But if you like it, go ahead and add that in! First, I softened some onions and then added in the chicken stock and quinoa. Once the liquid was absorbed, I added in the spinach and stirred it around until it started to wilt. Then, I added in the thawed corn and drained and rinsed black beans. Take it…

  • Bareburger

Yesterday I wrote about seeing Anastasia on Broadway and today I have not one, but two posts also from the day. First up is this short review of my lunch at Bareburger. My friend suggested we eat there because she had once before and really liked it. So we found a location near the theater and headed there for lunch before the show. Everything at Bareburger is organic and all-natural, which is so great. I love that it’s an eco-conscious restaurant! I ordered a side salad, the Kail Caesar and the American Burger. Both were delicious, but the salad really was one of the best salads I’ve ever had! This beautiful and scrumptious salad had…

I even went out to lunch with my friend the other day with the express goal of getting a salad. Now this salad is not exactly that healthy, but hey, baby steps right? We wouldn’t want our bodies to go into shock after the steady diet of cookies and gravies. For this salad, I…

Edamame & Red Pepper Chopped Salad

Edamame is one of my favorite snacks. I love ordering it as an appetizer at Japanese restaurants and I love snacking on it at home as well. Over the summer, I was really into salads and I did some searching online for salads incorporating edamame. I found a bunch of different ones, but for my first ever salad with edamame, I decided to just put together things I thought would go well together. I chopped lettuce, red bell pepper, and peeled some carrots into a large bowl. I de-shelled the edamame and rinsed them. Next, I toasted some walnuts. I love walnuts in salads! I made honey balsamic vinaigrette dressing from…
