I’m always looking for recipe ideas for appetizers and side dishes so when I came across this Quinoa Spinach Salad and saw how easy it was, I had to try it!
I pretty much used this exact recipe (here) from Trisha Yearwood except I didn’t use any cilantro, because I hate cilantro. But if you like it, go ahead and add that in!
First, I softened some onions and then added in the chicken stock and quinoa.
Once the liquid was absorbed, I added in the spinach and stirred it around until it started to wilt. Then, I added in the thawed corn and drained and rinsed black beans.
Take it off the heat and crumble some feta on top. This is when you would also garnish with cilantro if you so choose. Such a yummy little side dish to some meat or whatever you’d like!
