Do you love Mexican Street Corn? It’s so tasty, but sometimes you can’t or don’t want to get corn on the cob. Also, Mexican Street Corn can be a little messy to eat. Enter this salad version. Summertime is all about grilling and grilled vegetables for me, but sometimes you don’t feel like turning on the grill or the weather isn’t cooperating. Roasting vegetables is always a nice option. I don’t remember where I got this exact recipe for Italian Roasted Vegetables, but it might be this oneΒ as it’s essentially what I do. All you need for this recipe is: cauliflower, mushrooms, tomatoes (cocktail, cherry, and or grape), garlic cloves, italian seasoning, salt, pepper, and olive oil. I was never the kind of kid whoΒ didn’t like vegetables. I’ve always liked vegetables and broccoli is up there amongst my favorites. Broccoli salad is one of my favorite sides. It is so delicious. I love the sweetness of it and the crunchy broccoli. The almond slivers and the craisins are just the perfect accompaniment. I based my recipe off of this recipe from All Recipes with some changes. I’m always looking for recipe ideas for appetizers and side dishes so when I came across thisΒ Quinoa Spinach Salad and saw how easy it was, I had to try it! I pretty much used this exact recipe (here) from Trisha Yearwood except I didn’t use any cilantro, because I hate cilantro. But if you like it, go ahead and add that in! Egg, Roast Pork, & String Beans
Today I’m sharing something I’ve eaten pretty much my entire life so I guess you could say it’s a sort of comfort food. It’s an Asian style omelet in a way. It’s also incredibly easy to make. As I write this post on Tuesday night (Election Night) the election results are still not all in and I’m freaking out.
