    Summertime is all about grilling and grilled vegetables for me, but sometimes you don’t feel like turning on the grill or the weather isn’t cooperating. Roasting vegetables is always a nice option. I don’t remember where I got this exact recipe for Italian Roasted Vegetables, but it might be this one as it’s essentially what I do. All you need for this recipe is: cauliflower, mushrooms, tomatoes (cocktail, cherry, and or grape), garlic cloves, italian seasoning, salt, pepper, and olive oil.     I was never the kind of kid who didn’t like vegetables. I’ve always liked vegetables and broccoli is up there amongst my favorites. Broccoli salad is one of my favorite sides. It is so delicious.     I’m always looking for recipe ideas for appetizers and side dishes so when I came across this Quinoa Spinach Salad and saw how easy it was, I had to try it!     Today I’m sharing something I’ve eaten pretty much my entire life so I guess you could say it’s a sort of comfort food. It’s an Asian style omelet in a way. It’s also incredibly easy to make.
