• Mexican Street Corn Salad

    Mexican Street Corn Salad

Do you love Mexican Street Corn? It’s so tasty, but sometimes you can’t or don’t want to get corn on the cob. Also, Mexican Street Corn can be a little messy to eat. Enter this salad version. It’s the same delicious flavors and taste but in loose corn form. It is insanely good and I’ve made it a bunch of times now. I base my recipe off of this recipe I found on Pinterest and I basically follow the recipe except I don’t use cilantro (cause I hate it!) and I also skip the red onions. The recipe also serves 12 so I always halve the recipe and have enough to…

  • Italian Roasted Vegetables

    Italian Roasted Vegetables

Summertime is all about grilling and grilled vegetables for me, but sometimes you don’t feel like turning on the grill or the weather isn’t cooperating. Roasting vegetables is always a nice option. I don’t remember where I got this exact recipe for Italian Roasted Vegetables, but it might be this one as it’s essentially what I do. All you need for this recipe is: cauliflower, mushrooms, tomatoes (cocktail, cherry, and or grape), garlic cloves, italian seasoning, salt, pepper, and olive oil. Fresh parsley would also be a good touch and add some green to this dish, but I didn’t have any on hand when I last made this dish. This recipe…

  • Balsamic & Honey Cabbage Steaks

    Balsamic & Honey Cabbage Steaks

Weekends always go by way too fast and if you can believe it, next Sunday is already Easter. Last year I decorated Easter eggs with Flash Tattoos and I’m not sure if I’m going to do any eggs this year, but I am sharing a recipe that you could serve at your Easter dinner! I saw a recipe for Balsamic & Honey Roasted Cabbage Steaks on Pinterest a while ago. I pretty much stuck to the recipe so click above for the recipe! I washed a head of cabbage and sliced it up in about 1/2 inch slices. Then, I made the balsamic and honey mix to brush on to…

  • Broccoli Salad

    Broccoli Salad

I was never the kind of kid who didn’t like vegetables. I’ve always liked vegetables and broccoli is up there amongst my favorites. Broccoli salad is one of my favorite sides. It is so delicious. I love the sweetness of it and the crunchy broccoli. The almond slivers and the craisins are just the perfect accompaniment. I based my recipe off of this recipe from All Recipes with some changes. I halved the recipe, but other than that I did make some other changes. First, I decided to blanche my broccoli so that it would still be crunchy but not raw. Next up, was the dressing for the salad. The recipe…

  • Quinoa Spinach Salad

    Quinoa Spinach Salad

I’m always looking for recipe ideas for appetizers and side dishes so when I came across this Quinoa Spinach Salad and saw how easy it was, I had to try it! I pretty much used this exact recipe (here) from Trisha Yearwood except I didn’t use any cilantro, because I hate cilantro. But if you like it, go ahead and add that in! First, I softened some onions and then added in the chicken stock and quinoa. Once the liquid was absorbed, I added in the spinach and stirred it around until it started to wilt. Then, I added in the thawed corn and drained and rinsed black beans. Take it…

  • Egg Roast Pork & String Beans

Egg, Roast Pork, & String Beans

Today I’m sharing something I’ve eaten pretty much my entire life so I guess you could say it’s a sort of comfort food. It’s an Asian style omelet in a way. It’s also incredibly easy to make. Follow along to see how it’s made! First, cut up your string beans and roast pork (this can be found at any asian food stores) into bite size pieces. In a bowl beat 4-5 eggs. Add a little salt. In a wok, put some oil and stir around the string beans and roast pork. After I heat those up, I pour in the beaten eggs. I put a few dashes of oyster sauce…

    String Beans Almondine

As I write this post on Tuesday night (Election Night) the election results are still not all in and I’m freaking out. On the one hand it’s natural that they’re not all in because I think some of the west coast states’ polls are still open (I live on the east coast), but on the other hand I thought Hillary Clinton would be way ahead at this point so I’m so anxious I feel like I’m going to be sick. So, when this post goes up I’ll either be overcome with joy or trying not to cry my eyes out on my way to work. Seriously. So to distract myself from these…

    Easy Asparagus Side Dish

Asparagus is one of my favorite vegetables – to be fair I like most vegetables – but I feel like asparagus often gets overlooked! The only time I usually see pictures of asparagus on Instagram and the like is when it’s wrapped in bacon or prosciutto or something savory like that. But, today I’m going to share with you all one of the most common ways I’ve been eating asparagus my whole life. I know, I like to say that most of the recipes I share on here are fairly easy, but this one takes the cake! I snap the ends off the asparagus and then rinse them. Then, depending…
