Italian Roasted Vegetables

Summertime is all about grilling and grilled vegetables for me, but sometimes you don’t feel like turning on the grill or the weather isn’t cooperating. Roasting vegetables is always a nice option. I don’t remember where I got this exact recipe for Italian Roasted Vegetables, but it might be this one as it’s essentially what I do.

All you need for this recipe is: cauliflower, mushrooms, tomatoes (cocktail, cherry, and or grape), garlic cloves, italian seasoning, salt, pepper, and olive oil. Fresh parsley would also be a good touch and add some green to this dish, but I didn’t have any on hand when I last made this dish.

This recipe is super easy. Just combine all the ingredients in a large bowl and toss to mix and coat all the vegetables with the oil and seasonings. Pour on to a baking sheet and spread it all out in to a single layer. Bake at 400 for about 20-30 minutes – when the cauliflower is fork tender.
