I was never the kind of kid who didn’t like vegetables. I’ve always liked vegetables and broccoli is up there amongst my favorites. Broccoli salad is one of my favorite sides. It is so delicious. I love the sweetness of it and the crunchy broccoli. The almond slivers and the craisins are just the perfect accompaniment.
I based my recipe off of this recipe from All Recipes with some changes. I halved the recipe, but other than that I did make some other changes. First, I decided to blanche my broccoli so that it would still be crunchy but not raw.
Next up, was the dressing for the salad. The recipe calls for bacon and onions, but I tend to leave those out of my broccoli salad to keep it simpler. The dressing consists of mayonnaise, sugar, and white wine vinegar. I used red wine vinegar on the day I shot these photos, but have used white before. It tastes good with either.
The last change I make to the recipe is I use craisins instead of raisins.
Pour the dressing over the broccoli, mix, refrigerate, and serve chilled.
