If you’re looking for an easy side then look no further than these baked cheesy tomatoes. I found this simple recipe last year and all you need is tomatoes, shredded mozzarella, parmesan, basil, and olive oil. Fresh basil is recommended for this recipe but I don’t always have fresh on hand so I made it with dried in these photos.
Preheat your oven to 400 and slice your tomatoes. Arrange on a baking sheet and top with mozzarella, parmesan, basil, and a drizzle of olive oil. Bake for 8-10 minutes and broil if you want to brown the cheese more. That’s it!
