Broccoli is one of my favorite vegetables and I’m always looking for side dish ideas. I first made this roasted broccoli with almonds side last year and it is really good! It’s been a while since I’ve made it but after I came across these photos for this post, I decided to make it tomorrow!
I follow this recipe that I found via Pinterest. I just use it as inspiration, I don’t follow the measurements because it depends on how much broccoli I’m making and all that. I also usually don’t include the cheese, but I’ve made it both ways. I didn’t include the cheese when I took these photos.
For this recipe you’ll need:
- olive oil
- red pepper flakes
- sliced almonds
- fresh lemon juice
- lemon zest
- pecorino cheese (I use this sometimes)
First, cut your broccoli. You want to cut your broccoli in a way that it will lay nicely on the baking sheet when roasting. In a large bowl, whisk together olive oil, garlic, and red pepper flakes. Add in the broccoli and toss to make sure all the broccoli is coated. Arrange the broccoli, cut side down on a aluminum foil lined baking sheet. Sprinkle with salt. Roast for 10-12 minutes at 425. Take the pan out of the oven and toss the broccoli a bit, maybe flip them if you want. Add in the sliced almonds and roast for another 8-10 minutes. When the broccoli looks done or even caramelized and the almonds are golden, remove from the oven and squeeze some lemon juice, top with lemon zest, and pecorino cheese if desired.
It’s so good and easy to do. I only bought a little bit of broccoli this week, but the recipe can easily be adjusted.
