
String Beans Almondine
As I write this post on Tuesday night (Election Night) the election results are still not all in and I’m freaking out. On the one hand it’s natural that they’re not all in because I think some of the west coast states’ polls are still open (I live on the east coast), but on the other hand I thought Hillary Clinton would be way ahead at this point so I’m so anxious I feel like I’m going to be sick. So, when this post goes up I’ll either be overcome with joy or trying not to cry my eyes out on my way to work. Seriously.
So to distract myself from these electoral votes coming in, I’m sharing an easy side dish that you can make for an every day dinner or for the upcoming holidays! If you can believe it, Thanksgiving is almost 2 weeks away already! String Beans Almondine. All you need are string beans, shallots, sliced almonds, and oil.
First, I trim off the ends to the string beans and then I put them in a pot of water on the stove and bring to a boil until the beans or cooked but still crisp. While those are on the stove, I slice up some shallots and dish out some sliced almonds.
When the string beans are done, I immediately run them under cold water to stop them from cooking.
In a pan, I put some oil in and start browning the shallots and toasting up the sliced almonds. Then, I put the string beans in to toss them in and that’s it!
This dish is so easy, flavorful, and will look great served for guests at a holiday party!

Thank you. It’s been a really sad and shocking day so far. Hopefully something good can come from this! It’s frustrating because I know I did my part and my whole state went for Hillary. She also won the popular vote which means that more of the American people voted for her but the way our election system works, Trump still won. Crazy, right?
