Pan-Fried Shrimp Salad
With all of the rich foods and sweets I’ve been consuming over the holidays, my body has been craving vegetables. This is a salad I made a while ago, but I thought now would be a good time to share it in case, like me, you also feel like an extra intake of veggies is needed. I even went out to lunch with my friend the other day with the express goal of getting a salad.
Now this salad is not exactly that healthy, but hey, baby steps right? We wouldn’t want our bodies to go into shock after the steady diet of cookies and gravies.

For this salad, I used baby romaine lettuce, pan-fried shrimp, toasted walnuts, apples, and hard boiled eggs. For the dressing, I made a mixture of mayonnaise, salt, pepper, and apple cider vinegar.
