Tomato & Basil Bruschetta
Who doesn’t love bruschetta? Well, I suppose there are some people, but I’m not one of them! There are tons of different kinds of bruschetta you can eat/make but I’m keeping it super simple with this one. How is it super simple? It only has 6 ingredients! Grape tomatoes, basil, baguette, salt, pepper, and olive oil.
I diced up the grape tomatoes and cut up some basil leaves. I tossed it with salt, pepper, and olive oil and then spooned it onto slices of slightly toasted baguette. I like to only slightly toast the bread because if it’s not toasted it will be too soft and jut soak up the oil and juice from the tomato, but if it’s too toasted it can be difficult to eat because it will break apart after the first bite.
Bruschetta is the perfect appetizer for summer. This tomato and basil bruschetta is not only super simple for summer but also refreshing with the juiciness of the tomato and the crisp fresh basil with the flavors being highlighted by the salt, pepper, and olive oil.
