Vodka Skillet & Current Kindle Read
When I’m not eating with people or busy watching something while I eat, I love to read. More often than not if I’m reading while I’m eating it’s something on my Kindle because I can prop my Kindle up and eat without having to hold a book or get the pages dirty turning them.
A few nights ago I made one of my favorite meals which is inspired by Gathered Nutrition on Instagram – a vodka skillet. You can swap out what kind of meat and leafy green you use so whereas in her original post for this recipe she used Italian sausage I believe and kale, I like using ground turkey and baby spinach.
This recipe is extremely easy to make. To make it the way I do all you need is:
- ground turkey
- baby spinach
- cannellini beans
- vodka sauce
- shredded mozzarella
Cook the ground turkey until it’s no longer pink, add in the baby spinach and wait a couple minutes for the veggies to cook down a bit, then add in the beans and the sauce. Simmer for about 10 minutes, add the cheese, and cover for a few minutes until the cheese melts. That’s it!
I have made this a handful of times in the past few months and it’s delicious every time. It also makes for great leftovers. I made this a few nights ago and read The Lust Crusade on my Kindle as I ate. The food was delicious and the book has been so entertaining!
