Frozen Yogurt Bites with Chobani

Last week, I promised to post a healthier food option for the Super Bowl and today is that day! When I heard that Chobani had a challenge to create tasty, yet healthier, game day foods using their Greek yogurt I was all for it. You guys know I love a challenge! So the brainstorming began. I decided I wanted to be different and do a dessert because when I think of the Super Bowl I think of cheesy, greasy foods. Not that there’s anything wrong with those, in fact I’m all for them, but it’s nice to have a healthier and more refreshing option when you’re surrounded by foods that will make your stomach hurt a few hours later and give you a guilty conscience the next day.

I saw online a few different ideas of making bark using greek yogurt, which honestly was my original intention. Of course, things didn’t go quite as planned, but I forged on ahead and I came up with creating these frozen yogurt bites. And you know what? They turned out awesome and delicious!

So let me show you what I did.

First, I cut up some apricots into little bite size squares and chopped up some pistachios.

Then, I scooped out my Chobani Greek Yogurt into a bowl. I added honey to sweeten it up a bit. Honey instead of sugar because honey is a natural sweetener!

I lined an 8×8 pan with parchment paper and poured the yogurt in. The parchment paper is key so that the dessert can easily be lifted out of the pan after it’s frozen.

Now onto the colorful part! I sprinkled in the apricots, pistachios, and chocolate chips (which I left whole because they’re so small to begin with). Doesn’t it look colorful and delicious?!

Using a rubber spatula, I pushed the toppings down a bit so that they would incorporate into the dessert. I then put it in the freezer for 3-4 hours.

When I took it out of the freezer there were some lines on it from the parchment paper folding over, but it wasn’t a big deal since I would be cutting it up anyway.

I cut the bites into different shapes – squares, rectangles, triangles, odd chunks.

These frozen greek yogurt bites may have been a happy accident, but they turned out so good! I think this is a perfect dessert or snack for the Super Bowl because it is cold, refreshing, and has a tartness to it. It’s something light for you and/or your guests to munch on and if you don’t want to wait to serve it at the end of the night, then serve it inbetween other foods as a palette cleanser! The complexity of these bites is fantastic. There is the tartness of the yogurt, the chewiness and sweetness of the apricots, the distinct flavor of the pistachios, and the bits of chocolate. It is so good!
