It’s my first day back to work today. To say I’m less than thrilled that my summer break is over would be an understatement. But, it will be nice to get two paychecks a month again so there’s that. In more exciting news, I got the all-clear to wear contacts again from my eye doctor! And I had my first laser treatment on my face yesterday (a blog post on that coming this weekend)! And I got accepted in to RewardStyle thanks to an influencer friend’s referral!
All that good news aside, let’s talk about today’s topic – grilled cheese. But not just regular grilled cheese – grilled cheese with spinach! I decided to add in spinach one day because I had a ton leftover and I thought it would make it seem like a healthier lunch.
When I make grilled cheese, 99% of the time I use cheddar cheese and pepper jack cheese. I also just use sandwich bread like Wonder Bread or Wegman’s brand bread – nothing fancy.
I just butter one side of each slice of bread and put that side down, layer the cheese and spinach, close up the sandwich and cover with a lid. Flip and cover again. And that’s it!
The spinach offers a little bit of texture and crunch to the grilled cheese. Plus a little green never hurt anyone!
