Baked Chipotle Chicken

One of my favorite easy meals is baked chipotle chicken. I use this recipe that I found on Pinterest about 2 years ago. I basically follow the original recipe and adjust if I’m making less chicken or if I can only find paste instead of the actual chiles.

For this recipe you’ll need:

  • boneless skinless chicken breasts
  • chipotle chili powder (I often use regular chili powder)
  • ground cumin
  • dried oregano
  • oil
  • salt
  • black pepper
  • minced garlic
  • onion powder

This recipe is super easy, but you do need to marinate the chicken overnight or for 24 hours so you do need to plan ahead. All you have to do is mix the marinade together, put the chicken breast and marinade in a ziplock bag, squish it all together to get the chicken all coated and then refrigerate. Sometimes I mix the marinate all together in a bowl and other times I get lazy and just add the ingredients right to the bag and mix it all together when I’m squishing the bag around.

Place the chicken in a greased baking dish and bake at 400, covered, for 25-35 minutes. Then, bake uncovered for an additional 5-10 minutes.

That’s it! So easy and delicious, especially if you like spicy. I usually serve it with yellow rice and some sort of vegetable.
