
Halloumi & Spinach Salad
Have you ever had halloumi cheese before? A few years ago I saw someone pan frying it and I thought it looked so good. Little did I know my grocery store sells halloumi in the cheese section. I’m not sure you can eat it without cooking it because I’ve always seen it fried, grilled, etc. It is very easy to overcook it and make it tough and rubbery so this is one of those dishes that you learn as you go.
I’ve made halloumi a few different ways over the past two-ish years in different kinds of salads and appetizers, but I’ve made it here in a small spinach salad with grape tomatoes, olive oil, honey, balsamic vinegar, salt and pepper.
Slice your halloumi and pat it dry. I brush some olive oil on both sides and season with salt and pepper. Pan fry it and flip to lightly brown both sides. Then, I put my grape tomatoes in to get them to soften and start to blister. Add in a splash of balsamic vinegar. I added a dressing of honey and lemon and put it all together!
