Ice Cream with Healthy Bits

Although summer time is winding down, the heat is still going strong here. Ice cream, the always popular frozen treat, is one of my favorites any time of the year but especially during the summer months. When you’re eating lots of summer treats and a bunch of ice cream you can start to feel a little guilty about all the extra calories. And if you’re like me, you just haven’t found the time to really exercise much this summer. Meeting up with a friend to shop/eat/hang out or anything really vs. going to the gym? I think there’s a clear winner there!

Now this ice cream I recently had isn’t low fat or anything, but I did top it with homemade granola and banana slices so it’s kind of got a healthy spin to it. Right? No? Well, I mean let’s be serious I could’ve had whipped cream and chocolate syrup so…

The granola has almonds, walnuts, dried apricot, and coconut. I may write up a post on how I put this together in the future. If you’d definitely like to see that, let me know and I’ll write it sooner rather than later!
