Mexican Stuffed Shells

I’ve got a new food post for you all this evening! I don’t know why, but with football season, people (myself included) love eating all kinds of cheesy foods. While a lot of the time the foods tend to be more of the finger food variety – I suppose for easy eating? – the food post I have for you today is not finger food friendly.

Today, I bring you Mexican Stuffed Shells. I’ve been making these for a good three or four years now and to this day I think it is one of the yummiest things ever. There are so many different recipes for these stuffed shells and I remember combining a few different ones to a recipe that suited me with ingredients that I liked.

You’ll need uncooked pasta shells, corn, ground beef, taco seasoning, salsa, black beans, cream cheese, cheese, and taco sauce.

First, I cook the filling, which consists of the meat, corn, black beans, taco seasoning, and cream cheese.

After the pasta shells and filling have cooked, I cover the bottom of my baking dish with salsa. Then, I proceed to stuff each shell.

The shells go into the baking dish and I pour the taco sauce over the shells.

I sprinkle cheese (I use 4 Cheese Mexican from Sargento) and pop it in the oven. You want to keep it in the oven until the cheese is all melted or it’s at whatever stage you like. Since everything is already cooked, it really is a matter of personal preference.

These shells are so good! I never get tired of eating them even after all these years.

        I haven’t found any that do yet.
        People have been telling me I’m not taking enough but like – I’m not ready to run the gambit of experiments with cheese and my body to see how many is just enough, like – no.
        It’s serious but I’m not that cray cray
