
Potato Skins
Back when I was younger, aka could eat junk food all the time and not feel any of the effects, I would order potato skins all the time when I went out with my friends. This was mostly when we would go out after Friday night football games back in high school. Those days are long gone as are the days when my body could afford to be eating potato skins on a weekly basis. But it’s nice to indulge every now and again and since it is football season I thought it would be the perfect time to make potato skins at home!
The whole process is fairly easy so I made a short 2 minute video just to show how easy it is!
I used russet potatoes and scrubbed them clean since you will be eating the skin. Next, I used a corn on the cob holder to poke some holes in the potato to help them cook faster. Then, I rubbed oil on them and seasoned them with salt.
Then, I put them in the oven to bake. Once they were done, I took them out, cut them in half – careful they are really hot! Scooped a good amount of the insides out and filled them with cheese and bacon that I had fried up and cut.
Since the potatoes and bacon are already cooked you just want to put them back in the oven long enough for the cheese to melt.
They came out so good and probably a little bit healthier than if you ordered them in a restaurant so that makes me feel better! TheΒ onlyΒ thing I would change is I would add more cheese next time, but other than that they were delicious. A perfect Sunday football snack!
