
Kale Salad
Do you like kale? I feel like people either love it or hate it. I love getting the kale salads at Wegman’s because they’re so good and I rarely buy kale. But I found some photos on my camera of a recipe I tried out and liked but forgot to post on here. It’s a kale salad with a cranberry and almond vinaigrette. I used baby kale instead of regular kale and I may have made some other minor adjustments to this recipe, but I don’t remember since I last made it so long ago! I always make notes of recipes I try out – whether I substituted ingredients and cut any out, if I cut down on the quantity of an ingredient, etc. I did make notes for this recipe, but when I went to look for them in preparation for this post I accidentally deleted my notes! So I really don’t remember if I changed anything, but I do vaguely recall writing down that the amount of lemon juice that the recipe calls for was a bit too much for me.
First, I did all the prep work – cutting the shallots and garlic. Then you sauté the shallots and garlic and then add in all the things like the honey, lemon, red wine vinegar, etc. After that’s done, massage your kale with some salt and oil to soften it. Toss everything together and you’ve got a yummy kale salad with a cranberry and almond vinaigrette.
The salad really is very good – I just wish I didn’t accidentally delete my notes! However, I did link to the original recipe above so you can check that out if you want to make this salad!
