
Ice Cream Cake
Did you watch the series finale of Game of Thrones last night? I’ll go more in depth with my thoughts next week in a post after the 2 hour documentary, but I was a bit underwhelmed by the finale. And I wanted a happier ending for the Starks. But I’ll go all in to that next week sometime, which also gives anyone who’s behind in watching some time to catch up!
Anyway, on to this post – specifically the title of this post. When I say ice cream cake, I really mean cake. Today I’m sharing a chocolate cake with vanilla ice cream in the layers. 5 years ago (I know because my bff’s precious baby girl is about to turn 5!) at my friend’s baby shower they had a cake from Cold Stone that I thought was amazingly delicious. It was white or yellow cake and instead of cream in the layers it was ice cream. Genius! I’ve thought about that cake often and decided to try to make something like it myself.
I made chocolate cake using the recipe my mom has used for years, but you can use any chocolate cake recipe. We made the cake in a round pan and after it cools a bit, slice it in half using floss. Using floss gets a really nice, clean cut.
To soften the ice cream enough to spread, you can either leave the ice cream out or do as I did and soften it in the stand mixer. Using an offset spatula, I spread the ice cream on the the top of one of the halves of cake. Then, I carefully put the other half of the cake on top and spread more ice cream on top. Next, you’ll put it back in the freezer to keep it cold until you’re ready to serve. I use toothpicks on top so the plastic wrap doesn’t stick to the ice cream and put it in the freezer.
Lastly, I made homemade whipped cream to top it off when I served it.
So good! And who doesn’t love chocolate cake with vanilla ice cream?! Now I’m craving this cake after looking at all these photos.
