Rice & Bean Burrito
Are you ready for the easiest burrito recipe you’ll ever see (in my opinion)? I came up with this random idea 2 years ago and make it every once in a while. It’s so easy and good.
All you need are:
- refried beans
- Spanish/yellow rice
- shredded Mexican blend cheese
Those are the only ingredients!
First, I make the Spanish or yellow rice. I get the Goya brand and cook the rice according to package directions. Once the rice is done, I spread some refried beans on the tortillas. I add in the rice and then top with the shredded Mexican cheese. I, then, wrap it up in foil and put the ones I’m going to eat in the toaster oven for a few minutes to make sure the cheese melts.
It’s that easy!
