Hummus Chicken

Anyone a hummus fan? I love hummus. Does anyone remember that episode of Friends where George Clooney and Noah Wylie guest starred and they were eating hummus and George Clooney says “God bless the chickpea”?

I found a recipe for one-pan hummus chicken a while ago, but I can’t find the original recipe anymore. The link I had saved isn’t working anymore, unfortunately. I think the recipe was taken down. But, I’ll try my best to tell you how I make it!

For the recipe you’ll need:

  • chicken breast
  • hummus – I use roasted red pepper hummus for this recipe for extra flavor
  • zucchini
  • red pepper
  • lemon
  • salt & pepper

So I can’t remember if there is any spices other than salt & pepper and oil in this recipe, so I would say you should at least use those and then season with whatever else you want.

First, slice up the zucchini and lay the slices on the bottom of your baking dish. Then, dice the red pepper. I drizzled oil over the vegetables and seasoned.

I halved 2 chicken breasts and laid them on top of the vegetables. Then, spread the hummus over the chicken breasts. Squeeze some lemon juice over it and bake. I bake this for about 40 minutes because I’m always nervous that my chicken will be undercooked.
