Unofficial Disney Parks Cookbook + Carrot Cake Cookies

I think carrot cake is seriously underrated. I love carrot cake. I think it’s so good and flavorful. Not too sweet, just tasty. So when I was sent The Unofficial Disney Parks Cookbook and I saw that there was a carrot cake cookie recipe, I had to try it!

The cookbook is filled with recipes and is organized by park. You can find recipes from fan favorites at Epcot, Magic Kingdom, Animal Kingdom, etc. The carrot cake cookie is from Hollywood Studios and when I looked it up online to see what the photos looked like I saw that it was a sandwich cookie. The recipe in the cookbook does give a cream cheese frosting recipe for the sandwich cookie, but I decided to just make the cookies and not sandwich them. I did this for ease and also because I didn’t want them to be too sweet. They turned out absolutely delicious.

For this recipe you’ll need:

  • butter
  • light brown sugar
  • granulated sugar
  • egg
  • vanilla extract
  • all purpose flour
  • baking powder
  • baking soda
  • ground cinnamon
  • salt
  • old-fashioned rolled oats
  • unsweetened shredded coconut
  • chopped walnuts
  • large carrots, peeled and shredded

I followed the recipe exactly, except for the sandwich part. I also used coconut flakes instead of shredded because that’s all my supermarket had.

In a stand mixer, cream the butter, brown sugar, and granulated sugar. Then, add the egg and vanilla. After combined, add in the flour a little at a time. Once that is incorporated, add in the baking powder, baking soda, cinnamon, and salt. Beat until combined.

In a food processor or blender (I used a mini prep) add the oats, coconut, and walnuts. Mix until it’s a coarse crumb mixture. Add this crumb mixture to the stand mixer and mix together. Then, add the shredded carrots. I just did a quick mix of this and then folded it in better by hand.

Scoop onto a baking sheet and bake for about 12 minutes at 350 or until the sides start to brown. The recipe says it makes 12 cookies. I’m sure they make pretty large cookies. I don’t. So I ended up with more than 2 dozen.

These cookies are seriously so good. If you like carrot cake then this recipe is a must!
