Today’s my last day of work and summer break starts tomorrow!
Do you like fruit in your salad? I have to be in the mood for it, but I do. I found this easy strawberry feta salad recipe a few years ago on Pinterest, but the website where I got the original recipe isn’t up anymore so I can’t link to it!
I do have the recipe though so I’ll share below!
The recipe is for 4 cups of spinach so adjust accordingly. For this recipe you’ll need:
- 4 cups spinach
- 1 tablespoon olive oil
- 2 tablespoons balsamic vinegar
- 1/8 teaspoon black pepper
- 2 cups strawberries, sliced
- 1 cup walnuts
- 1/2 cup feta cheese
Wash and dry your spinach, then top it with the olive oil, balsamic vinegar, and black pepper. Toss to combine. Add in the sliced strawberries and walnuts. Toss again. Finally, add the feta cheese. Mix a little and that’s it!
It’s so good and easy to make! Perfect for a refreshing summer lunch!
