Pistachio Cake

Every once in a while I’ll browse on Pinterest for some food, fashion, or craft ideas. Or to look longingly at the many jaw droppingly beautiful travel photos all over the site. I’m not one of those people who are on Pinterest daily though, I just never caught that bug. Today I bring to you my try at a recipe I found through the site and it was not a Pinterest fail at all, but a complete success!

I made a pistachio cake and it came out looking pretty good and tasting pretty good too. I got the recipe here and it was super simple. The recipe calls for yellow cake mix, Jell-O Pistachio Instant Pudding, eggs, water, vegetable oil, almond extract, green food coloring, and powdered sugar to top it off (which I forgot about, but it still tasted great).

I combined all the ingredients in my mixing bowl, including the drops of food coloring.

Using a hand mixer I mixed all the ingredients together.

The recipe didn’t call for it, but I had some actual pistachios on hand and decided to just throw them in there. Couldn’t hurt, right? Then I put it in the oven. Note: The recipe says to bake it for 50-55 minutes, but I checked on it around 40-45 minutes and it was cooked so I took it out.

The actual pistachios that I threw in there were a nice addition. I would put even more in next time. Since I was just testing it out, I only put a handful in. The cake was moist and delicious! The green coloring is fun too. Plus, the recipe was super simple to follow and I think it would be really difficult to screw it up. Have you tried any Pinterest recipes before?

    For a long time, I thought I didn’t like pistachio. Then I tried it again recently and loved it! I’ve tried many recipes from Pinterest but usually meals, not dessert. Good call on adding in the pistachios!
