Cranberry Pecan Tea Cookies

A few days ago I wrote about what I wore to Back to School Night . Today, I’m back to share with you some cookies I made for it. For pretty much all the things we, the staff, need to stay late at school for (Back to School Night, parent/teacher conferences) we do a potluck, because having to stay at work for hours longer than usual is made a tiny bit better if there’s food involved obviously.

I always bring some sort of dessert like a cake or cookies, because I don’t want to have to deal with fridge space in the teachers’ lounge and I also don’t want to have to deal with the hassle of having to heat something up. I do, however, try to bring something different each time. I found this recipe on Pinterest and it looked yummy and easy enough to make after work the night before. I’m so happy the recipe turned out well!

It really could not have been easier. The ingredients are pretty straight forward. It calls for butter, milk, sugar, flour, vanilla, salt, pecans, and dried cranberries.

All the ingredients were mixed together and then I poured in the pecans and dried cranberries. I put the mixer on the lowest setting to get it to turn around once or twice to mix in the pecans and cranberries.

Then, I split the mixture in half onto 2 pieces of plastic wrap. I rolled and stretched it into logs and tried to make them as even as possible. They can either be refrigerated for 2 hours or put in the freezer for less time. I put them in the freezer for about 45 minutes.

I sliced the logs and rolled the edges in sugar. It bakes at 375. The recipe said 10-15 minutes, but I set my timer for 8 minutes and worked from there. The first tray that went in was done in 8 minutes. I think a few of the other trays needed a minute more, but I would start with 8 and play it by ear (or sight). The tops come out pale looking (maybe because there’s no eggs in the recipe?) but the bottoms are golden brown.

The cookies were so good and definitely something I will make again! I put them out at the pot luck and when I went to get my container at the end of the night, they were all gone! Success! I think they’ll be a great cookie for the holidays and I’m thinking about rolling the edges in green sanding sugar for Christmas. If I do, I’ll be sure to post a picture of it!
