We had our first snow of the season yesterday with a few inches. I spent the day in the city (New York City) to see the Downton Abbey Exhibition and see some holiday sights, which I’ll write all about in more depth in the next week or so. But for this post, I wanted to share a great cold weather meal. This chicken noodle casserole uses cream of mushroom soup, but I thought “Chicken & Cream of Mushroom Soup Noodle Casserole” was too long of a name for the dish.
I pre-cooked chicken thighs and shredded them. I cooked potatoes and carrots in cream of mushroom soup and then added in the shredded chicken to mix it all together. I also pre-cooked some noodles and then put them in a baking dish. Then, I poured the cream of mushroom soup and chicken mix over the noodles and baked it covered.
This is the perfect comfort meal for the winter!
