One of my favorite desserts is Mango Sticky Rice frequently found on the menu at Thai restaurants. When I looked up the recipe, I found that it seemed pretty simple and for the past 2 years I’ve made it a handful of times myself at home! If you aren’t familiar with the dessert, it is sticky rice cooked in coconut milk with additional coconut milk drizzled on top and served with mango. The warm, sweet, rice is so good and the fresh, sweet mango is the perfect balance both in taste and in temperature.
One of the recipes I saw said to mix jasmine and sweet rice together, which is what I did here for these photos. Since then, I’ve made the recipe with just jasmine since it’s easier (sweet rice takes longer to cook) and it’s tasted super delicious as well.
Instead of cooking the rice in water, cook it with coconut milk. Meanwhile, on the stove, cook some coconut milk with some sugar for the topping. When most of the liquid has cooked out of the rice its ready. Pour some of the coconut milk glaze on top and serve with some sliced mangoes.
It is sooooo good! It’s one of my favorite desserts and I love making this and having leftovers. Just warm up the rice and the extra coconut glaze and cut some more mango pieces up and you’re good to go for another serving or two or three…!
