
Pasta Fagioli
I remember the first time I had pasta fagioli. I was in grade school and out at an Italian restaurant with my family and I thought it was the best thing ever. Since that day (a very long time ago) my mom has made her own version of pasta fagioli. A while ago I took photos as I made a batch with her so I thought I’d share in a post today.
So here’s what we use:
1/2 lb of macaroni
1 stalk of celery
1 small onion or 1/2 of a medium onion
2 slice of ham or 2 slice of bacon
1 can of white beans
1 can of red beans
3 cans of chicken broth
Olive Oil
1 tablespoon of pasta sauce
I like my pasta al dente so I boiled the macaroni just undercooked since it’s going to go in to the broth again later.
I put some oil in a pot and brown the bacon or ham (ham in this case). Then, I remove the ham and put in the onions and celery and cook until softened. Next, I put in the chicken broth, pasta sauce, and beans and bring it to a boil. I add in the macaroni and ham until heated through. I also like adding in Italian seasoning for more flavor.
And that’s our version of pasta fagioli!
