Slow Cooker Cheesy Salsa Chicken

I love slow cooker recipes, but they can be hit or miss. But when they’re good, they’re good. This Cheesy Salsa Chicken is an example of a really good one. It was a Pinterest find a few years ago and I’ve made it multiple times so trust me when I saw it is extremely easy and extremely delicious!

The pin is still on Pinterest, but the recipe seems to be gone from the website so I can’t link to it, unfortunately. However, I know the steps for the recipe and the ingredients are still on Pinterest so I can still share all the details with you.

For this recipe you’ll need:

  • 1 1/2 lbs of chicken breast
  • 1 can of salsa
  • 2 cups of cooked Mexican rice
  • salt
  • 2 cups of Mexican cheese
  • cilantro

You may need more salsa depending on the size of your slow cooker. The one I own is a bit smaller, but the one at my parents’ house is bigger so when I have made it over there I use a little more salsa so that there’s more liquid in the pot. The recipe also specifies to use Old El Paso salsa, but use whatever you want! I didn’t use Old El Paso. Salsa is salsa, right? Last thing I changed is that I don’t use Mexican rice per se, I always buy the Goya Spanish Style Yellow Rice. This is seriously so good. I could juste at bowls of this rice!

Cheesy Salsa Chicken

Okay, so first, you’re going to cut your chicken breasts in to cubes. I don’t remember what size cubes the recipe calls for, but I tend to just eyeball 1-inch cubes.

Pour salsa in to the bottom of your slow cooker and put the chicken in. Cover with more salsa, add a little salt, give it a good mix and set the slow cooker. 3-5 hours on high, 4-6 hours on low.

When the time is up, add in the 2 cups of cheese, and cook for additional 30 minutes.

You’re going to want to eat before this is ready because it is going to smell so good. When the time is up, check to make sure the chicken is cooked which it should be because it’s been cooking for around 5 hours by now.

At this part, you can garnish with cilantro, but I cannot stand cilantro so that wasn’t happening for me. Anyway, serve the cheesy salsa chicken over rice and enjoy!

Like I’ve said already, this is a very good slow cooker recipe and dish. Best part is that it’s one of those meals that tastes even better after reheating it, so I have taken leftovers of this to work before and it makes for a scrumptious lunch!
