
Cabbage Rolls
Cabbage isn’t for everyone, but I love it. I’ve had cabbage rolls out at restaurants before, but when I saw an “easy” cabbage roll recipe on Pinterest (the recipe is literally called “Easy Cabbage Rolls”) I had to try it! I followed the recipe almost exactly so click on the link for all the in-depth instructions! The only thing I changed was that I used all pork for the stuffing instead of a pork/beef mix. And I used 1 medium onion instead of 2 small. Other than that, I followed the recipe!
First, boil your cabbage leaves for about 2 minutes to make them soft and pliable. Set aside and cook your rice. Then, it’s time to make the stuffing. I cooked the pork, garlic, onion, dill, and parsley until the meat wasn’t pink. Next, add in the rice, diced tomatoes, 1/3 of the tomato sauce, salt, pepper, and egg. Mix the remaining tomato sauce with the tomato soup in a bowl. Spread a thin layer on the bottom of your baking dish. Spoon some filling in to the cabbage leaves and gently roll, folding in the sides. Place seam side down in your baking dish. Pour the remaining sauce over the cabbage and bake for 75-90 minutes at 350. Let cool for 15 minutes before serving.
The cabbage rolls are really tasty and delicious. They take a bit of time to make so I wouldn’t recommend making them for a weeknight unless you have a lot of time. It will stay a weekend meal for me. I do hope to make it again soon!
