Popcorn Shrimp Shrimp Po’ Boy

I am almost all packed up and moved out of my townhouse. It’s very bittersweet and I felt probably every emotion in the range of emotions yesterday. This morning I just have to pack up a few little things and my bathroom things and I’m out. Of course, as mentioned in previous posts, my furniture is staying here until I move in to my condo and then I’m going to (hopefully) get a moving company to move those. It’s a really weird feeling, but I’m trying to stay positive and think about the fun I’ll have decorating my new place. But I try not to think about that too much either because then I think about all the money I’m going to need to spend!

So let’s talk about something much happier, like food! Yes, this post is called “Popcorn Shrimp Shrimp Po’ Boy”. It is seriously one of the easiest meals you can make because I use frozen popcorn shrimp instead of frying my own shrimp for the sandwich! Remember that Food Network show, Semi-Homemade? It’s like that. I’m making a homemade roumelade sauce and building the sandwich myself, of course, but I’m using frozen popcorn shrimp.

For the sauce, I follow this recipe . I make the sauce, and cut up some lettuce and a tomato. I spread the sauce on my bread, layer the vegetables, and then put some popcorn shrimp in. I was at my parents’ house when I took photos of this so I used the air fryer to make the shrimp, but when I make it at my place I just cook them on a baking sheet in the oven.

To make the sauce you’ll need:

  • mayonnaise
  • minced garlic
  • lemon juice
  • dijon mustard
  • hot sauce (I usually use sriracha, but here I used tabasco)
  • relish
  • green onion
  • Worcestershire sauce
  • creole seasoning

You can click on the link above to the exact recipe for the measurements and adjust accordingly depending on much sauce you’ll need. You do need to mix the ingredients together and let it refrigerate for at least an hour to let the flavors mellow.

Like I said, this recipe is so easy mainly because I’m using popcorn shrimp so you don’t need to do any hard work like frying! I also just like the size of the smaller shrimp for the sandwich.
