Pear & Arugula Pizza
I hope you had a nice weekend and are ready for this last week of October! I found this recipe for a Pear & Arugula Pizza via Pinterest over a year ago and I’ve adapted it over that time. The original recipe uses homemade pizza dough, but I always make it with Pillsbury pizza dough to make it a quicker, easier meal for me to make.
For this recipe you’ll need:
- pizza dough (I use store bought)
- mozzarella
- pears
- walnuts
- blue cheese
- onion
- butter
- arugula
Since I use the Pillsbury crust I do the pre-bake first. While the oven is preheating and the dough is doing the initial 8 minutes of baking, I caramelize chop the onions and caramelize them in butter (use a little bit of sugar to help the caramlizaton). I also slice the pears and toast the walnuts at this time.
When the dough comes out, I sprinkle shredded mozzarella on top, arrange the sliced pears, onions, blue cheese, and walnuts over top. Put the pizza back in the oven til the cheese is melted. I put it back in typically for another 8 or so minutes. The Pillsbury directions say to cook the dough for an additional 8-10 minutes (I think) after the pre-bake. When the pizza is done, sprinkle some arugula on top and it’s ready to eat!
This pizza is so good! I love the combination of the cheese, pear, walnuts, and arugula. In recent months whenever I’ve made this I’ve left out the blue cheese. I have a sudden aversion to blue cheese so I just don’t use it anymore on this pizza and it tastes just as good. Sometimes I forget the walnuts, not on purpose but just because I forget, and it’s still good but the walnuts are always a nice addition.
