    Seafood Pasta

    I don’t know about you, but I tend to eat a lot more seafood in the summer months. The food post I bring to you today is an easy (what else is new) pasta dish with shrimp, scallops, and clams. First, I pan-seared the shrimp and scallops. For the sauce, I used garlic and onions (that I first browned), white wine, anchovy paste, and the clam juice from the canned clams. Next, pour the sauce into the pasta pot and toss. Lastly, add in the seafood. Finally, plate your seafood pasta and add some parsley for garnish!

    Pecan Crusted Pork Tenderloin

    Hi all, it’s only Tuesday and I feel like I’ve been running around non-stop. I’ve been busy with errands, a 2-day virtual conference/workshop that wraps up tomorrow, and I’ll have to pack tomorrow for yet another trip.     Stuffed Pork Tenderloin

    I’m back with another food post. I feel like it’s been a little while since I’ve done one of these, so today I’m sharing some pictures of this Stuffed Pork Tenderloin. I’ve made this a few times so far and it’s always delicious. I’m not a big pork eater.     Thanksgiving Eats

    Thanksgiving and food go hand in hand. It’s a time to reflect on everything you are thankful for and on a lighter note a time to eat to your heart’s content.
