Pecan Crusted Pork Tenderloin
Hi all, it’s only Tuesday and I feel like I’ve been running around non-stop. I’ve been busy with errands, a 2-day virtual conference/workshop that wraps up tomorrow, and I’ll have to pack tomorrow for yet another trip. I’m going away for a long weekend for the wedding of two of my dear friends, but before I go I have a few posts left to do before more wedding and/or travel posts go up.
Today, I bring you another food post and it is a Pecan Crusted Pork Tenderloin, which as a majority of my food posts are, is fairly easy.
I put italian breadcrumbs, and pecans (which I roughly chop up first) into a mini-prep.
I rub a mixture of mayonnaise and mustard onto the pork tenderloin.
Once it’s rubbed onto the meat, I roll the tenderloin into the breadcrumb & pecan mixture.
Put it in the oven at 350 for about 50 minutes. Once it’s done, slice it up and you’re done!
Eat with whatever sides you like! I usually like to eat this with mashed potatoes and some other kind of vegetable like string beans, but it’s totally up to you!
