
Chili Mac & Cheese
Happy Saturday! I’ve said it multiple times this season and I’m going to say it again – this weather is crazy. It was spring like weather just a week ago and then yesterday it was snowy and the weather forecast for this Tuesday is a potential major snow storm. Part of me would love a snow storm since I’d been wanting more snow this winter. The other part of me is done with winter and ready for a change.
Today I’m sharing another meal I made via Pinterest. This one-pot chili mac & cheese is something I made a while ago but am just getting around to posting now. I used this recipe (here) and didn’t change anything except didn’t use parsley simply because I didn’t have any on hand. When I saw this on Pinterest, I knew I wanted to make it. Who doesn’t like mac & cheese? Who doesn’t like chili? Combine them together and it’s bound to be a winner!
Since I didn’t change anything from the original recipe I won’t get in depth, just click on the link above. I browned the ground beef with garlic and onion. In a pot I cooked the beans, seasonings, and tomatoes in chicken broth. After that began to simmer I stirred in the macaroni, brought it to a boil and then let it simmer until the macaroni was cooked. Once that was done I removed it from the heat and topped it with shredded cheddar and let it all melt which didn’t take long since it was steaming hot. And voila!
Perfect comfort food especially if you end up being snowed in next week like I may be!
