
Cheesy Ranch & Taco Seasoned Potatoes
It doesn’t feel like the end of October. How are there only 2 days left to the month? It also doesn’t feel like Halloween is this weekend. Maybe because of the pandemic and there will be few, if any, trick or treaters this year. But anyway, I’m sharing a recipe today that is perfect for fall, or any time of the year really.
I found this cheesy ranch potato recipe on Pinterest last year and the recipe allows for a lot of modifications which I took advantage of and also added something else on my own, but I’ll get in to that later.
First, cut up your cleaned potatoes. I cut them in large chunks and I left the skin on because I feel like it allows the potatoes to hold their shape more. Place dots of butter on the potatoes and season. Now the original recipe seasons with salt & pepper, but also gives other suggestions – one being taco seasoning, which is the route I went. I covered the potatoes in taco seasoning (a little too much in this photo because it came out a bit salty, so just be mindful of how much you use). Cover with foil and bake at 400 for 50-60 minutes or until fork tender.
When you take the potatoes out, add ranch dressing and shredded cheese. The original recipe says to use the cheese of your choosing. Since I was going the taco route, I used taco seasoned cheese from Wegman’s. I also added bacon, because bacon makes everything better!
Put it back in the oven for a few minutes until all the cheese is melted.
