
Apple Pecan Feta Salad
Are you a salad fan? I feel like people either love salads or hate them. I love them. I’ve made this one a few times and I need to make it again soon. It’s a delicious spinach salad with pecans, feta, bacon, dried cranberries, in a maple-cider vinaigrette. I found the recipe here and I follow it except I don’t usually put onion in it and I cut down the ingredients depending on how many servings I need.
For this recipe you’ll need:
- baby spinach
- gala apples
- pecans
- feta cheese
- dried cranberries
- bacon
- red onion (I usually leave this out)
For the maple-cider vinaigrette:
- olive oil
- apple cider vinaigrette
- maple syrup
- dijon mustard
- salt & pepper
In a bowl toss together your spinach, toasted pecans, apple slices, feta, dried cranberries, and crumbled bacon. Whisk together the dressing ingredients and drizzle it over the salad.
